Menu 4 Course Tapas Dinner:
1. Green Banana Escabeche and Longaniza Salad
Traditional Green Bananas Salad better known as (Guineitos en Escabeche) with Spanish Sausage (Longaniza) in a Onion Escabeche Sauce Reduction and Cilantro Infused Oil.
2. Crispy Skin Lechón and Arroz con Gandules
Yellow Puerto Rican Rice and Pigeon Peas (Gandules), Lechón (Roasted Pig Leg) and Crispy Skin over Mojo Paste and Recao Infused Foam.
3. Beef Pasteles in Achiote Oil (Puerto Rican Tamal)
Puerto Rican version of tamales made with Plantains, filled with Beef, served over a banana leaf and achiote infused oil.
4. Farewell Coquito Sampler (Puerto Rican Eggnog)
Three Coquito (Puerto Rican Eggnog) Sampler Shots made of Coconut and infused with:
